Ingredients

  • 1 lb thinly slicedPotatoes
  • 1 slicedOnion
  • 3 tbspOlive oil
  • 1/2 cupCheddar (optional)
  • 2 cupsSpinach (optional)
  • to tasteSalt

Method

  1. Cook potatoes and onion in oil in an ovenproof skillet over medium-low, covered, until tender, 15 minutes.

  2. Beat eggs with salt (and cheese); stir in spinach if using.

  3. Pour over potatoes and cook without stirring until the edges set, 5 minutes.

  4. Finish under the broiler for 2–3 minutes until puffed and golden.
