How long do leftovers last?
3 to 4 days in the fridge for most cooked leftovers, and 2 to 3 months in the freezer for best quality — as long as they went into the fridge within 2 hours of cooking. The details, per food, are below.
| Food | Fridge (≤40°F / 4°C) | Freezer (0°F / −18°C) |
|---|---|---|
| Cooked leftovers (general) | 3–4 days | 2–3 months |
| Cooked chicken or turkey | 3–4 days | 2–6 months |
| Cooked ground beef, meatballs | 3–4 days | 2–3 months |
| Cooked beef, pork, lamb | 3–4 days | 2–3 months |

| Soups and stews | 3–4 days | 2–3 months |
| Pizza | 3–4 days | 1–2 months |
| Cooked rice | 3–4 days | about 6 months (best quality) |
| Cooked pasta | 3–5 days | 1–2 months |
| Hard-boiled eggs | 1 week | not recommended |

| Raw ground meat or poultry | 1–2 days | 3–4 months |
| Raw steaks, chops, roasts | 3–5 days | 4–12 months |
| Raw chicken or turkey pieces | 1–2 days | 9 months |

Why the 2-hour rule exists
Between 40°F and 140°F (4–60°C), the “danger zone”, bacteria can multiply fast. Set the room temperature and how long the food has been sitting out.
In ideal conditions, fast-growing bacteria can double about every 20 minutes: 3 doublings, so 1 cell could become 8.
Within the 2-hour limit. Refrigerate now.
The dot count is an illustration of exponential growth, not a lab prediction. Real growth depends on the organism and the food.
Storing leftovers so they last
- Shallow containers. A deep pot of chili can stay warm in the middle for hours. Split it up.
- Label and date. A strip of masking tape stops the “how old is this?” guessing game.
- Keep the fridge at 40°F (4°C) or below and the freezer at 0°F (−18°C). An appliance thermometer costs a few dollars.
- Reheat to 165°F (74°C). Stir microwaved food halfway so there are no cold spots.
- Plan for them. Cooked rice and chicken are the base for leftover rice dinners and enchiladas.
Questions people ask
How long are leftovers good for in the fridge?
Most cooked leftovers keep 3 to 4 days in a refrigerator at 40°F (4°C) or below, according to USDA FSIS. Freeze them within that window if you will not eat them in time.
Can I eat leftovers after 5 days?
USDA advises not to. Harmful bacteria such as Listeria can grow at fridge temperatures without changing smell or look, so “it smells fine” is not a reliable test.
How long can food sit out?
No more than 2 hours at room temperature, or 1 hour if it is above 90°F (32°C), like a hot car or a summer picnic.
Do I need to cool food before refrigerating it?
No. Put leftovers in the fridge promptly. Divide big batches into shallow containers so they cool quickly.
What temperature should I reheat leftovers to?
165°F (74°C), measured with a food thermometer. Bring sauces, soups and gravies to a rolling boil.
