Shakshuka

Eggs poached in spiced tomato: a pantry dinner that looks like brunch.

Ingredients

  • 6Eggs
  • 28 ozCanned tomatoes
  • 1Onion
  • 1Bell pepper
  • 3 clovesGarlic
  • 1 tspGround cumin
  • 1 tspPaprika
  • 2 tbspOlive oil
  • 1/2 cupFeta (optional)
  • to serveBread (optional)
  • pinchRed pepper flakes

Method

  1. Soften onion and pepper in oil 8 minutes; add garlic and spices for 1 minute.

  2. Add tomatoes and simmer until thick enough to hold a well, 10 minutes.

  3. Make six wells, crack in the eggs, cover and cook 5–8 minutes until whites set.

  4. Crumble feta on top; serve with bread.
