Loaded Potato Soup

Leaving some chunks gives body without a blender. Use veg broth and skip bacon to keep it vegetarian.

Ingredients

  • 2 lbPotatoes
  • 2 cupsMilk
  • 1Onion
  • 3 cupsChicken or veg broth
  • 2 tbspButter
  • 1 cupCheddar
  • 4 slicesBacon (optional)
  • to serveSour cream (optional)
  • to serveGreen onions (optional)
  • to tasteSalt

Method

  1. Cook onion in butter 5 minutes; add diced potatoes and broth and simmer until very tender, 15 minutes.

  2. Mash roughly in the pot, leaving some chunks.

  3. Stir in milk and cheese over low heat until smooth.

  4. Top with bacon, sour cream and green onions.
