Egg Drop Soup with Noodles

Ingredients

  • 3Eggs
  • 6 cupsChicken or veg broth
  • 2 blocksRamen noodles
  • 1 tbspSoy sauce
  • 1 tspFresh ginger
  • 1 tbspCornstarch
  • 3Green onions
  • 2 cupsSpinach (optional)
  • 1 tspSesame oil (optional)

Method

  1. Simmer broth with ginger and soy; add noodles for 3 minutes.

  2. Stir in cornstarch mixed with 2 tbsp water to lightly thicken.

  3. Stir the soup in a circle and slowly drizzle in beaten eggs to form ribbons.

  4. Add spinach, green onions and sesame oil.
