Black Bean Quesadillas

Mashing half the beans glues the filling together so nothing falls out.

Ingredients

  • 4 largeTortillas
  • 1 can (15 oz)Black beans
  • 2 cups shreddedCheddar
  • 1/2 cupCorn (frozen or canned)
  • 1/2 tspGround cumin
  • to serveSalsa (optional)
  • 1Jalapeño (optional)
  • to serveSour cream (optional)

Method

  1. Drain the beans and mash half of them with cumin.

  2. Spread over half of each tortilla; add corn, jalapeño and cheese, then fold.

  3. Cook in a dry skillet over medium 2–3 minutes per side until crisp and melted.

  4. Cut into wedges; serve with salsa and sour cream.
