Red Lentil Curry

Red lentils need no soaking and melt into a thick sauce in twenty minutes.

Ingredients

  • 1 cup red lentilsLentils
  • 1 can (13.5 oz)Coconut milk
  • 14 ozCanned tomatoes
  • 1Onion
  • 3 clovesGarlic
  • 1 tbsp gratedFresh ginger
  • 2 tbspCurry powder
  • 1 tbspVegetable oil
  • 2 cupsSpinach
  • to serveRice (optional)
  • to serveCilantro (optional)
  • to tasteSalt

Method

  1. Soften onion in oil 5 minutes; add garlic, ginger and curry powder for 1 minute.

  2. Add rinsed lentils, tomatoes, coconut milk and 1 1/2 cups water.

  3. Simmer, stirring, until lentils collapse, 18–20 minutes.

  4. Stir in spinach until wilted; season and serve over rice.
